FALL!!! September 22nd is FALL!!! Of course I’ve got my snuggly boots, big heavy scarves, pumpkin everything all ready for the big event! I hope you enjoy this funny video!
Oh yeah….that’s totally me! BUT it won’t stop me from making delicious fall oatmeal raisin droplets! These are delicious cookies my boys love.
OATMEAL RAISIN DROPLETS
INGREDIENTS
2.5 cups all purpose flour
1 teaspoon salt
2 teaspoons baking soda
1.5 teaspoon cinnamon
2 cups rolled oats
1 cup coarsely chopped walnuts
3 large eggs
1 teaspoon vanilla extract
1 cup raisins
1 cup shortening
1 cup dark brown sugar
1 cup granulated sugar
DIRECTIONS
Preheat oven to 350 degrees.
Combine eggs, raisins and vanilla in a medium bowl and let stand for an
hour.
Beat shortening and both sugars together in a large mixing bowl or use an
electric mixer with a paddle attachment.
Thoroughly stir in the flour, salt, baking soda and cinnamon.
Gradually add flour mixture to sugar mixture, stirring flour mixture.
Stir the egg, raisin, vanilla mixture. Stir in the oats and nuts. Shape dough
into 1 ½ inch balls and place on parchment lined cookie sheets.
Bake for 12-15 minutes.
