Whether you’re celebrating with a loved one, sharing the love with friends, or treating yourself, there’s nothing like a homemade sweet treat to make the occasion feel extra special. Today, I’m sharing a personal favorite: my Gluten-Free Cheesecake recipe that’s as easy to make as it is delicious!
Tonya Kappes’s Gluten-Free Cheesecake
This creamy, dreamy cheesecake is perfect for satisfying that sweet tooth without the gluten. Here’s the simple recipe straight from my kitchen to yours, guaranteed to bring smiles and sweet moments this Valentine’s Day.
Ingredients & Directions
Filling:
3 packages (8 oz each) softened cream cheese
1 1/4 cups of sugar
2 teaspoons vanilla extract
4 eggs
Directions:
Preheat oven to 325°F.
For the filling, beat cream cheese and sugar on low speed until blended.
Add vanilla extract and eggs, one at a time, mixing well.
Pour into your chosen pan or muffin tins. (Tip: For a crust, try a premade gluten-free option!)
Bake for 1 hour to 1 hour and 15 minutes or until puffed and light golden brown.
Turn off the oven, let the cheesecake stand in the oven for 15 minutes with the door open.
Remove and cool on a wire rack. Refrigerate leftovers.
This recipe yields enough for one full cheesecake and eight mini muffin tin cheesecakes.

For an easy crust:
1) 3 or 4 oz. Of each nut – walnut, almonds, pecans or what nut you like.
2) 1/2 cup brown sugar
Mix in food processor until feels like wet sand. 4 or 5 min.
It should clump.
Put in bottom of pan and press down with something flat.
